Two Brothers Tap House & Brewery’s new executive chef, Josh Downing, unveiled a revamped menu packed with nearly a dozen new elevated dishes that complement the brewery’s handcrafted artisan craft beers.

Core favorites like the Chimichurri Nachos, Waffle BLT and others remain, but diners will be pleasantly surprised to find more vegetarian options, out-of-the-box appetizers, and chef-driven specialties.

New starters include: Pork Belly Lettuce Wraps constructed with Cane and Ebel BBQ braised pork, lemongrass, ginger, charred pineapple and cucumber; a poke dish with lemongrass ginger soy marinated tuna, quinoa, sesame seed, cilantro, scallion, kimchi, mango and wonton strips; and Scottsdale Elote, a grilled sweet corn dressed with smoked paprika, cotija cheese, lime, chipotle mayo and ancho chile popcorn.

Vegetarian stand-out options include, soy marinated and sesame crusted tofu tacos with Mexican accompaniments; and Spent Grain & Quinoa Burger with feta cheese, black olives, pickled onion, arugula and house-made tzatziki sauce.

Additional new dishes include chicken shawarma with a brewery spin; a loaded Sonoran Dog; Piri Piri Roasted Half Chicken made with a North African rub, house-made Piri Piri sauce over fries served with salsa verde; and melt-in-your-mouth Mesquite Smoked Short Rib.

Josh Downing, who joined Two Brothers Tap House & Brewery in June 2016, entered the Scottsdale culinary scene from Chicago where he most recently served as the executive chef for Winberies Restaurant.

Prior to this, Chef Downing served as the executive chef of Chicago’s La Cantina Chophouse in Italian Village. He brings to Two Brothers more than 12 years of experience in the restaurant and food industry and is a graduate of The Cooking and Hospitality Institute of Chicago. Additionally, Chef Downing is a National Guard veteran.

While experiencing the new menu, enjoy one of Two Brothers’ seasonal beers or year-round favorites. Several new locally brewed beers will be joining the lineup this fall, including High Noon, an imperial cream ale brewed with six-row barley and corn; Weissecracker, a traditional Berliner Weisse brewed with premium German malts and hops served with guest’s choice of Woodruff syrup imported from Germany or house-made raspberry or habanero mango syrups. Guests can expect the return of some wildly popular brews including Dragon Eyes, an oatmeal amber brewed with cinnamon, orange, and black tea, and Adalaide, a traditional Burton-style IPA with roots to the early 1600s.
