The Arizona Biltmore, A Waldorf Astoria Resort has announced the appointment of a trio of new chefs – including Chefs de Cuisine for the main restaurants and a new pastry chef – who bring 53 years of culinary experience, insight and accomplishment to the dining operations at the historic Phoenix resort.

Chris Vitanza is the new Executive Pastry Chef. He has 26 years of experience in the hospitality industry including Executive Pastry Chef for Sanibel Harbour Resort & Spa and Pastry Chef for Walt Disney World Contemporary Hotel & Resort. Most recently he served as Executive Pastry Chef for Have Spatula Will Travel designing pastry programs for hotels, restaurants and supermarkets.

Brian Peterson has been named Chef de Cuisine of Wright’s at the Biltmore, the resort’s signature restaurant. He has a 14-year background with leading resorts and restaurants in Arizona including Chef de Cuisine at The Boulders Resort and Executive Chef of Superstition Mountain Golf & Country Club. Most recently he was Executive Chef and partner of award-winning Earnest Restaurant in Chandler.

Steve Sprague has been promoted to Chef de Cuisine of Frank & Albert’s, the Biltmore’s popular dining spot featuring Arizona comfort food. His 13 years of experience with leading hotels and restaurants includes the last four years at the Arizona Biltmore as the resort’s Banquet Sous Chef and Sous Chef of Frank & Albert’s.

Gordon Maybury, who has been the resort’s Executive Chef since February 2013, continues to head up the culinary team at the Arizona Biltmore.
