GRUBSTAK, an upscale fast casual concept, is opening to the public Monday, December 5th.

GRUBSTAK gives guests stak-able options that eclipse typical casual fare. GRUBSTAK will be located at Heritage Marketplace on Gilbert Road and Vaughn Avenue, just south of the U.S. 60.

At GRUBSTAK, the chef-tested entrees are called signature staks and garden staks. Each starts with a base of crispy waffle fries (sweet potato or regular or a 50/50 mix), roasted root vegetables or crunchy greens. From there, chefs stak the base with braised in-house proteins, fresh toppings and homemade sauces to complete the dish. GRUBSTAK’s menu includes:

  • The Grubstak 50/50 waffle fries, Schreiner’s breakfast sausage, pork belly, cheddar cheese, grub gravy, fried egg
  • Gold Rush 50/50 waffle fries, golden chicken, golden sauce, bleu cheese, carrots, celery
  • Grubatouille Roasted root veggies, Parmesan crusted zucchini and yellow squash, tomato sauce
  • Mac Attack Grubchetta Mac ‘n cheese, tomato chetta, more mac – served with Shishito pesto
  • Give Me S’More Cinnamon graham cracker bread pudding, marshmallow fudge sauce, brûléed marshmallow

If guests are feeling adventurous or specific, “Grub Your Way” allows them to build their dream stak. From here, guests can also order GRUBSTAK favorites a la carte (sometimes all you need is a side of sweet potato waffle fries). Those dining-in at GRUBSTAK can enjoy craft beer and wine from a list selected to compliment the menu including options from Four Peaks Brewery, Mother Road Brewery and Provisioner Wine.

You may recognize the Grubb last name. Owner Colton Grubb, is the grandson of Valley automotive icon Lou Grubb. Arriving from Long Island in 1945 with $27 in his pocket, Lou created one of the most trusted businesses in Phoenix history. Colton continues that legacy with his commitment to community, integrity and superior customer service with GRUBSTAK. Colton honed his business skills with companies like the Phoenix Suns, Audi, Nissan and Toyota.

GRUBSTAK’s décor features wood accents, open seating, covered patio, shared indoor/outdoor tables and two large walls of floor-to-ceiling windows for a bright, fresh, dining scene perfect for gathering with friends and family.

GRUBSTAK will be open Mon – Thurs 10:30am to 9pm, Fri & Sat 10:30am to 10pm and Sun 10:30am to 8pm.
