Royal Palms Resort and Spa, Phoenix’s renowned luxury boutique hotel, announces the launch of brand-new dining menus at its acclaimed destination restaurant, T. Cook’s.  The new dinner and lounge menus focus on a renewed culinary approach to the restaurant’s signature Mediterranean cuisine, showcasing layers of French, Italian, Spanish and Greek flavors in a lighter, more modern interpretation of the region’s cuisine.

“The resort’s culinary team has done a tremendous job crafting the restaurant’s new approach, while maintaining the style, traditions and prestige T. Cook’s reflects,” said Steve Benson, Royal Palms Resort and Spa General Manager. “Both longtime patrons and visiting guests will recognize a stronger focus on smaller, sharable portions and plates that combine fresh and locally sourced ingredients to create big flavors, but executed with simple preparations.”

Diverse flavors permeate the menu as first introduced in the selection of appetizers, referred to as Tastes.  Crispy Sweet Breads offer a unique sweet and salty twist with house-made estate orange preserves, salted caramel and rosemary.  Penn Cove Mussels with charred chorizo, garlic, fennel, saffron and Parmesan toast and Maya Farms First Crop Beet Carpaccio with Fossil Creek goat cheese and spiced pecans showcase the highest quality ingredients prepared simply, yet deliciously.  Starters maintain seasonality in the Shaved Asparagus & Preserved Lemon salad with first of the year morels, Reggiano and heirloom tomatoes and the Truffle Spring Pea Soup with butter poached lobster, sweet pea tendrils and porcini mushroom cream.

This new, contemporary approach to highlighting Mediterranean flavors is further exemplified in the menu’s Mains as showcased in a Lamb Duet – an olive oil pressed rack, celeriac pudding, spiced shank, pearl pasta and pine nut crumble.  Local produce, handpicked directly from the property’s citrus grove, adds a bright citrus element to Crispy Black Cod with estate-grown orange salad, truffle creamed corn, roasted asparagus and sea salt.  Modern comfort food best describes the Gnudi – doughless cow’s milk ricotta ravioli with spaghetti squash, charred tomato broth and pesto.  Completing the dinner menu is an offering of Essentials, sides of vegetables such as Spiced Rapini & Reggiano and Caramelized Petite Root Vegetables.

T. Cook’s Lounge menu has also experienced a revival with an offering of casual bites mirroring the flavor profiles and sophistication of the new dinner menu.  Bar classics have seen a makeover as shown in the Bison Sliders with black fig ketchup, smoked onion marmalade served on toasted brioche and Flash Pan Calamari with mint, capers, fire-roasted tomatoes and garlic bread for dipping.  Zucca Chips take the place of fried zucchini; the crispy slivers are served with fried Italian parsley, Parmesan and fire-roasted red pepper dipping sauce.  Traditional Mediterranean fare such as Marinated Olives, Marinated Feta, Garlic Hummus and Bruschetta are each served with special accompaniments to liven up the dish.

Royal Palms Resort and Spa will soon introduce new brunch and lunch menus to debut mid-March.  In addition, T. Cook’s offers specialty menus for holiday dining, as well as seasonal specials.

CityScape Adds Potbelly Sandwich Shop, Menswear Retailer

CityScape Phoenix will introduce yet another first for Arizona with the opening of Potbelly Sandwich Shop, the popular Chicago-based chain, along with the addition of the men’s apparel store, JoS. A. Bank, both coming to downtown this fall.

Potbelly Sandwich Shop will occupy a 3,000 square-foot space beside Fuego CityScape along First Street. The restaurant company has built a passionate, loyal following of fans who spread the word about the fun, energetic atmosphere and great food. The unique Potbelly Sandwich Shop experience is defined by its combination of toasty warm sandwiches, hand-dipped shakes and friendly, lively people.

“When you think of famous sandwich shops with cult followings, Potbelly is definitely on the list. We’re thrilled to be able to bring this East Coast favorite to Arizona,” said Jeff Moloznik, general manager of CityScape. “Potbelly Sandwich Shop is the perfect addition to the variety of restaurants we have at CityScape Phoenix.”

Additionally, JoS. A. Bank will open a 3,600 square-foot store that offers a full selection of men’s tailored and casual clothing, footwear and accessories. With 550 stores nationwide, what makes the retailer unique is also what has attracted customers to the stores for 107 years; a heritage of quality and workmanship, an extensive selection of beautifully made, classically styled tailored and casual clothing, and prices typically 20 to 30 percent below competitor prices. The store will open in August and occupy the former Republic of Couture space.

“We’re excited to reinforce the value of dining and shopping destinations in downtown,” added Moloznik. “With Hotel Palomar Phoenix opening this week and these two major tenants preparing to open this fall, we’re playing off of a really positive momentum.”

Kimpton’s Hotel Palomar Phoenix is opening June 5 at CityScape. The boutique hotel offers 242 spacious guest rooms and suites, all with modern interior touches and views of the surrounding city and mountains. In step with the signature style of Kimpton’s Hotel Palomar, the Phoenix destination combines contemporary design with an “Art in Motion” theme embracing the undercurrent of artistic energy throughout. Amenities include approximately 10,000 square feet of multi-use space across 10 meeting rooms, which can be customized for social and business events. The adjacent Blue Hound Kitchen & Cocktails showcases a menu of new American cuisine for lunch, dinner, late-night and weekend brunch and a blazing cocktail program that raises the bar for drink culture in the city’s urban core, while the hotel’s third-floor outdoor pool terrace and adjacent Lustre bar provide a scenic venue for gathering.

Kimpton Palomar Hotel Set To Open June 5

The countdown is on for the opening of the 242-room Kimpton Palomar Hotel at CityScape in Downtown Phoenix.

The 225,000 SF boutique hotel at 2 E. Jefferson St. is scheduled to open June 5, company officials said yesterday during a hard hat tour of the property.

The Kimpton will occupy 10 floors in the second tower of CityScape. Of its 242 rooms, 116 will be deluxe rooms, including 16 suites and 12 studio rooms. There will be a 1,400 SF presidential suite and a 900 SF junior presidential suite. The 520 SF studio rooms will include soaking tubs in the bathrooms.

It will also include 10,000 SF of flexible meeting space, 2,700 SF of pre-function space and 10 meeting rooms, including a high-tech boardroom for 15 guests. The 6,000 SF pool deck and pool bar area will be available for private functions.

The new hotel will also feature a signature restaurant, Blue Hound Kitchen & Cocktails.

The hotel’s rooms offer views of South Mountain, Chase Field and US Airways Center. The pool deck area also overlooks Downtown Phoenix.

The Kimpton Palomar plans to hire 150 employees once it opens, and officials said that number could rise to 250 in the future. (For information on a job fair, visit kimptonhotels.com).
