Texaz Grill celebrates National Chili Day

Who:   Chili enthusiasts, steak lovers and anyone looking for a bowl of chili that’s as big as Texas.

What: Did you know that chili (aka chili con carne) originated right here in the Southwest, with San Antonio, TX serving as the birthplace of this spicy stew? Celebrate Texas and National Chili Day with some Texas Red Chili from TEXAZ Grill on Thursday, February 26. It’s safe to say owner, Steve Freidkin knows his chili, as he enters his 28th year as a judge at the annual world championship chili cook-off in Terlingua, Texas. To celebrate the national holiday, Steve is offering “all you can eat chili” for $7.50 (no sharing, to-go, or doggie bags) from 11 am – 4 pm for all the chili lovers out there.

The Dish: Chili and Honey Chicken Recipe

Honey’s not just for sweetening your tea! Add depth of flavor to a dish by drizzling in a little honey or use it to compliment tangy, spicy recipes like this one.

Chili Lime Chicken with Honey

— 2 tablespoons chili powder

— 1 tablespoon mild honey, preferably local

— 1 tablespoon fresh lime juice

— 1 teaspoon salt

— 1/2 teaspoon black pepper

— 4 whole chicken legs (2 lb), thighs and drumsticks separated

Put oven rack in upper third of oven and preheat oven to 425°F. Line bottom of a 15- by 10-inch shallow baking pan with foil and set an oiled large metal rack in pan.

Stir together chili powder, honey, lime juice, salt, and pepper in a large bowl, then add chicken and turn to coat completely.

Transfer chicken to rack, arranging in 1 layer, then bake, turning over once, until cooked through, 30 to 35 minutes.
