Foodie Friday: Peppermint Hot Cocoa Cupcakes

From Frosted Frenzy Cupcake’s Kitchen to Yours

By Brittany Belsterling

There are two things synonymous with the holidays: baking and hot cocoa. So why can’t you have your cake and eat it too? Here is a great recipe to combine the two… without the stress.

Cupcake pros from Frosted Frenzy, a Valley-based mobile and delivery gourmet cupcake company, share their favorite holiday cupcake baking recipe that combines the comfort of hot coca, the seasonal favorite of peppermint and the beauty of a Pinterest-inspired cupcake that you can do right in the comfort of your own kitchen. Frosted Frenzy is owned by two moms, Tami Hatch and Candy Shipley, who say that they are passionate about the family baking recipes that they use, “as two moms, we have tried-and -true baking recipes that have been passed down in our family for generations; from our kitchen to yours, we hope you enjoy these cupcakes as much as we do.” Here is Candy and Tami’s homemade secret recipe for peppermint hot cocoa cupcakes:

  1. Start with a homemade chocolate cake batter made with a high quality chocolate, such as Valrhona. It will bring out that deep rich chocolate flavor.
  2. Once you bake your cupcakes, let them cool. Next, core the center of your cupcakes and add hot fudge sauce; we enjoy using Callebaut chocolate for our fudge. This smooth dark chocolate tastes amazing compared to other brands.
  3. Next, prepare your peppermint flavored cupcake icing. For our icing, we use a European butter for whipping our buttercream and then add a few drops of peppermint extract while mixing the icing to get a cool peppermint flavor.
  4. Now it’s time to decorate and add the final touches to your cupcake. We tint our buttercream icing a light pink using Americolor food coloring to signify the peppermint flavor. We also use a large star tip (4CS) to create the pretty ruffle design. Next, sprinkle your icing with chocolate shavings or sprinkles; you can also drizzle your extra fudge over the top for added chocolate flavor. Add a peppermint stick for fun, just like you would with a warm cup of hot cocoa and enjoy!

Foodie Friday: Where to Play With Your Food

The Duce

525 S. Central Avenue

The Duce in downtown Phoenix combines a vintage lounge atmosphere with an assortment of All-American snacks, cocktails and fare. The repurposed warehouse is so much more than a bar — from a boxing ring, to picnic tables stacked with vintage board games, a kitchen in an airstream trailer and an army surplus store with Etsy-ish arts and crafts speckled throughout. Whether you’re DD or enjoying your spiked lemonade from a mason jar, The Duce will have you entertained for hours. The Duce has created such a unique environment that it appeared on Food Network’s Diners, Drive-Ins and Dives.

The Yard

5632 N. 7th St.

Fox Restaurant Concepts opened an second Culinary Dropout location in Arizona, but with the new location came a new name and a new twist. The Yard still has a delicious menu that is very similar to its Scottsdale counterpart, but it offers brunch on Saturdays and Sundays. The Yard, a repurposed auto warehouse, is also home to a grassy plot for fun and games as well as alternative dining at Little Cleo’s.

Bad Mother Cluckers

26 E. University Dr.

The Valley has multiple restaurants that specialize in chicken, including Lo-Lo’s Chicken and Waffles, Raising Cane’s and Bad Mother Cluckers. Just like Lo-Lo’s uses its addition of delicious waffles to distinguish its menu, Bad Mother Cluckers provides a giant version of the classic game“Jenga” and encourages a side of healthy competition with your finger-licking good chicken.

Saddle Ranch

9375 W. Coyotes Blvd., Glendale
