Batch Cookie Shop, the locally owned sweet shop at 1495 N. Higley Rd., #107 that features behemoth scratch-made gourmet cookies, is expanding with four new locations throughout the East Valley. The stores — two in east Mesa and two more in Gilbert — are set to open in the coming months.

In August, Batch Cookie Shop will open the first two of its four new stores — one at 5221 S. Power Rd., St. 102 in Mesa and the other at 4764 S. Higley Rd., #105 in Gilbert. The company’s new downtown Gilbert location at 213 N. Gilbert Rd. and its second Mesa location at 10851 E. Baseline Rd., #A-102 are slated to open in September. Batch’s original location is at 1495 N. Higley Rd., #107 in Gilbert.
