Humble Bistro, the charming neighborhood wine parlor with European bistro flair and global cuisine, is bringing its new concept, Humble Bistro and Marketplace, to the Gilbert community in early spring. Located at 1524 E. Williams Field Rd, the eatery will offer brunch, lunch, happy hour, and dinner service, along with a fully stocked marketplace to shop.  

“We’re beyond thrilled to open our new concept in one of the hottest communities in the East Valley,” said Jorge Gomez, chef and partner of Humble Bistro. “The freshly renovated space will feature the signature Humble Bistro charm with the inclusion of the marketplace and coffee bar. A visit to Humble Bistro is not just a meal, it’s an experience. We think these additions will add to that.”

This 5,000 square foot space will be located on the corner of Val Vista and Williams Field Road with a 1,500 square foot patio that will have a similar décor to the High Street Humble Bistro location, which resembles a welcoming, European cafe. The ensuite marketplace is expected to open after the restaurant and will include food products from local artisans as well as Humble pastas, pizza doughs and their popular chili honey. Guests will be able to enjoy a coffee bar, ice cream bar and wine store before or after their marketplace shopping. 

Guests can look forward to pastas and breads made in house as well as fresh, top-quality cheese and meats imported from Spain and Italy.   

The Gilbert location is expected to open in early spring. A hiring fair for this location will take place on March 16 and 17 from 12 to 4 p.m. The team is seeking 10 to 15 kitchen employees including a sous chef, and 25 employees for the front of house, including servers, hosts and bartenders.
