Santé, a new high-end concept focused on healthful, organic food and sustainable ingredients, will open in North Scottsdale (15507 N. Scottsdale Rd.) on December 14 with a grab n’ gourmet café as well as breakfast, happy hour and dinner service. The eatery will begin serving lunch in 2022

Guests can look forward to globally inspired cuisine that goes beyond being organic, with options for vegan, vegetarian, paleo, gluten-free, keto, and low-FODMAP diners – all served in an upscale, hip environment with a focus on sustainability that extends from ethical, organic ingredient sourcing to composting.

The one-of-a-kind concept was co-founded by well-known restauranteur and EVO founder Nick Neuman and longtime friend Nico Doniele who has extensive experience in the hospitality industry coupled with a love for food and wellness and a certification in health coaching.

“My motto is ‘let us live to eat and live longer to eat,’ and Santé embodies that,” said co-founder Nico Doniele. “We wanted to create a beautiful, inclusive restaurant where people with all kinds of dietary restrictions can dine together and enjoy the community and connection we’ve been missing over the last nearly two years.”

The menu, largely inspired by Nico’s own health journey and world travels, will offer nourishing dishes from a variety of cuisines. Signature dishes include buttermilk brined chicken with pickled spaghetti squash, brown rice chicharron, olive and cherry gastrique as well as a bison filet with onion puree, roasted yellow tomatoes, red wine and hemp reduction. Other standout items include the roasted carrots with lentil hummus, shishito cornbread with maple butter and cheddar.

Even the menu’s most decadent items are made with ingredients from regenerative and organic, biodynamic farms, making them a great option for a healthy lifestyle.

The cocktail program will be uniquely crafted for dinner and brunch, and guests will be delighted by tableside cocktails brought right to them on a bar cart. Standout dinner cocktails include a split-base, smoked old fashioned made with rye whiskey and mezcal and a spicy margarita, where the brunch menu will feature a ‘Dole Whip’ mimosa and a decadent espresso martini.

The extensive wine program consists of nearly 50 biodynamic, largely old-world wines, as well as some unique wines including orange wines and sparkling rosés.

Santé’s grab n’ gourmet café will showcase the restaurant’s coffee and tea program, as well as grab-n-go options for healthy meals, snacks, supplements, and Santé merchandise.

Guests can also look forward to a variety of community-focused events including Sunday School – our fun, educational seminars with talks provided by wellness professionals.

The 5,000 square-foot space includes an extensive, wrap around patio and private dining space with chic décor that blends Hollywood Regency glamour with boho touches. Design features include living green moss walls, neon signs and a pink feather chandelier, with a focus on blush tones, brass accents and natural wood.
