Located in the lively Downtown Phoenix core, Kimpton Hotel Palomar Phoenix today announced Eden, the reimagined rooftop bar that will take over the former LUSTRE Rooftop Bar space. Slated to debut on Jan. 18, 2023 as the newest of the boutique hotel’s food and beverage story, Eden will offer an energetic setting to sip, savor and socialize with innovative food and beverage menus complemented by experiential design and programming.

Led by seasoned mixologist and Lead Bartender Clint Spotelson, Eden’s beverage program will match the boldness and energy present in its culinary offerings and design. The menu will showcase a diverse collection of cocktails made with unique ingredients and house-made syrups, with each beverage thoughtfully designed to excite guests’ palates. Signature selections will include the Garden of Eden, a refreshing blend of serrano and cilantro-infused tequila, lime juice, agave nectar and Italicus and the Desert Sunset, prepared with locally sourced Arizona Distilling Company commerce gin, gran ponche, pistachio orgeat, lemon juice and egg white. Eden’s beverage menu will also highlight a selection of large-format cocktails and low and zero-ABV options.

Mediterranean flavors expertly fused with elements of coastal cuisine designed and executed by celebrated Executive Chef Alexander Robinson, a 20-year industry veteran helming the full Kimpton Hotel Palomar Phoenix culinary experience, will be at the forefront of Eden’s menu. Passionate about experimenting with food to create unexpected, memorable flavor profiles, Robinson will offer an innovative collection of share plates and tapas that will rotate seasonally and showcase mindfully sourced produce and meats.

To conceptualize the vision for Eden, Kimpton Hotel Palomar Phoenix tapped California-based Wilson Ishihara, a leading full-service hospitality design studio specializing in hotel and restaurant design to completely reimagine the third-floor space. Totaling 5,000 square feet, the 153-seat Eden will be a socially vibrant oasis to gather and celebrate, set to the backdrop of the Downtown Phoenix skyline. A nod to its name, Eden will draw inspiration from Arizona’s treasured desert gardens and textures and will be adorned with plantings that thoughtfully complement its spacious bar, signature rooftop pool experience and vibe-driven lounge. Select areas of the venue will offer shade as a respite from the desert sun while simultaneously creating the illusion and feel of an indoor/outdoor space. Design will be grounded in the colors, textures and stone found in Arizona’s celebrated desert landscape with vibrant pinks inspired by the cactus flower in harmonious contrast with light neutrals and pops of teal. Geometric patterns and textiles will adorn the walls and surfaces throughout the space to create additional color highlights and moments of whimsy. The bar space will serve as the focal point of the space, with plush cabanas, communal seating and fire pits facing its direction to create welcoming yet intimate seating areas.
