With 28 years of experience in the professional culinary world and a solid reputation for his Bistro on Wheels 18-foot custom-designed catering trailer, Chef Wade Simpson has revamped his menu to focus on a variety of mac and cheese specialties. The newly converted Chef Wade’s Mac-n-Cheese Truck hits valley streets today.

Mac and cheese has been the bestseller on Chef Wade’s Bistro on Wheels menu for years, and he noticed that there is not another food truck in the valley focusing solely on this popular side-dish-turned-main-entrée. This became the impetus for converting Bistro on Wheels to create and serve a wide array of inspired mac and cheese varieties. 

“I wanted to take something simple that everybody loves and really turn up on the volume on flavor profiles and interesting ingredient combinations,” says Simpson of his new concept. “At the end of the day, it’s about making our customers happy and feeding them great tasting, good quality food.”

Unique options include the Truffle Mushroom Mac-n-Cheese featuring black truffle oil, oyster and crimini mushrooms, and the kicked-up Southwest Mac-n-Cheese with green chile, tomato, smoked pork and BBQ sauce. From the sea options include the Lobstah Mac-n-Cheese with peas, lobster, garlic butter and parsley, and the Nawlin’s Mac-n-Cheese with Andouille sausage, shrimp and Cajun spice. Mac-n-Cheese with fresh mozzarella, tomato and pesto, and the Sicilian Mac-n-Cheese featuring spicy Italian sausage, grilled onions, tomato and pesto offer guests a taste of Italy with their mac and cheese. 

All American options round out the menu with the Bacon and Tomato Burger Mac-n-Cheese featuring a brisket burger topped with Truffle Mushroom Mac-n-Cheese, and the Grilled Ham and Mac-n-Cheese Sandwich on Texas toast. Chef Wade even has something for the health-conscious and vegan mac and cheese lovers — The Mac-n-Trees includes broccoli, cauliflower and cashew puree, and butternut squash. The Classic Mac-n-Cheese can be dialed up to meet customers’ specific preferences with optional toppings such as hot dog, grilled onion, green chile, pesto, bacon, bistro fries and smoked pork. For adventurous eaters, the Special Mac-n-Cheese dares customers to “just order without asking.” Go ahead!
