The team from Hi Noon Hospitality announced the opening of Pinyon, a restaurant celebrating coastal Mediterranean culinary traditions that will debut on October 29th in Scottsdale. Nestled along the park in Old Town, Pinyon is more than a dining destination—it’s about community, connection, and the joy of gathering with the people who matter most.

“After embarking on an epic journey through the Mediterranean Basin, immersing ourselves in its timeless recipes, coastal traditions, and vibrant food culture, the idea of Pinyon came to fruition,” said Adam Strecker, CEO and founder of Hi Noon Hospitality. “From the coasts of Spain and Italy to the markets of Morocco and Turkey, we discovered a kind of magic—one that we’ve woven into every detail, so guests will feel it from the moment they walk through our doors.” 

Pinyon is housed in a building that underwent a spectacular, multi-million-dollar transformation—an architectural and design overhaul that elevates the surrounding area and invites new energy into Old Town Scottsdale. The project was brought to life through the vision and collaboration of Aline Architecture, Social Design Studio, and MCI Builders.

At the heart of the kitchen is a Josper Grill—a hand-forged, live-fire, charcoal oven and grill imported from Barcelona and prized by chefs around the world for its ability to sear, smoke, and elevate every ingredient. This method honors simplicity and the true flavor of exceptional ingredients. Pinyon’s culinary team will bring it to life with dishes that balance smoke, texture, and depth—whole roasted turbot, prime flat iron, and Pinyon’s famous porterhouse and charcoal grilled skewers, including Sea of Cortez shrimp and B&R Reserve tenderloin.

The full menu at Pinyon reflects the vibrant flavors, spices, and culinary traditions from the 22 Mediterranean countries. Guests can expect crudos and house-made pita, small plates, seasonal salads, and pastas, all crafted with open-flame grilling, fresh produce, and bold, transportive flavors that evoke a journey throughout the entire Mediterranean Basin.

A highlight of the menu is the Hummusiya menu—a rotating selection of hummus and dips designed for sharing and served with warm pita baked fresh in-house daily. Options include more traditional dishes such as fava bean dip, baba ganoush, or grilled artichoke, as well as the more complex flavors of pistachio labneh or traditional made-in-house hummus with charcoal-grilled beef tenderloin with Aleppo pepper.

Fresh seafood also takes center stage at Pinyon. The culinary team showcases the beauty and delicate flavors of the fish through simple, elegant preparations that let the quality shine, including dishes such as yellowtail crudo, salmon carpaccio, stuffed calamari, linguine and clams, and dressed Dungeness crabs. Guests can also enjoy daily oyster selections, served chilled with house-made mignonette.

Pinyon offers a comprehensive bar program that complements its coastal Mediterranean menu. With a special focus on spritzes, craft cocktails, and a specially curated list of wines of Corsica, Sardinia, Sicily, and the Eastern Mediterranean Islands, the beverage offerings are designed to both refresh and delight. An extensive wine menu features wines from locales in the United States and across the globe, from Italy, Spain, and France to Israel, Armenia, and Croatia. Guests can expect a full selection of aperitifs and amaros, as well as liqueurs, spirits, beer, and wines by the glass.

Pinyon’s interiors were designed to evoke timeless comfort and craft. Warm wood tones, exposed ceiling beams, and a checkerboard marble floor—custom cut from Verdi Alpi and Calacatta Rosa in Portugal—create a refined yet welcoming atmosphere. The downstairs bar glows with artisanal brass fixtures suspended over polished marble, while cozy red leather booths add intimacy and classic European bistro charm.

The main dining room opens seamlessly to a European-inspired patio—an alfresco haven centered around an antique fountain.Surrounded by Chilean mesquite and olive trees, the patio offers a serene escape where guests can dine under the Arizona sky. Whether enjoying a leisurely lunch or a candlelit dinner, the space invites conversation, connection, and a sense of timeless elegance. With soft lighting, natural textures, and the gentle sound of water, it’s a setting designed to slow time and elevate every moment.

Upstairs, guests are greeted by expansive views of the park and treetops. The indoor–outdoor bar features a custom zinc bar top with inset brass and alabaster lighting, casting a soft glow over evening service. Locally crafted brass shelving and fixtures serve as sculptural accents, bringing warmth and refinement to the space. Textured stone walls along the stairwell echo the cobblestone streets of Europe, adding depth and character to the journey.

Art plays a central role in Pinyon’s storytelling. The space is brought to life by artists whose work captures place, emotion, and craft. From the Valley’s own Mike Carson and his evocative figurative oil paintings to the abstract works of New Orleans-based Rami Sharkey, each piece was chosen to deepen the guest experience—inviting reflection, conversation, and connection to the world beyond the walls.

Pinyon is also available for private events, offering a range of thoughtfully designed spaces to elevate any occasion. From intimate dinners in the private dining room to open-air cocktail soirées on the upstairs terrace or downstairs patio and park-side gatherings with loved ones, each setting is crafted to foster connection and celebration. Private dining menus feature customizable family-style dishes, small plates, and shareables—designed to bring people together over vibrant flavors and shared experiences.
