Bourbon & Bones Chophouse | Bar plans a third location at 83 Marketplace on the southeast corner of 83rd Avenue and Happy Valley Road, in Peoria, slated to open Fall 2022, five years after its flagship location debuted in Old Town Scottsdale.

The highly anticipated 5,800 square foot space will be situated on a standout corner of the development offering mountain views and an additional 1,000 square feet of patio space ideal for cocktails and dining al fresco.

“We like the location and believe it will be a development that’s in line with the quality of Bourbon & Bones,” said S. Barrett Rinzler, Founder & CEO, Square One Concepts, which owns Bourbon & Bones and Cold Beers & Cheeseburgers among other concepts.  “We know there is pent-up demand for fine dining in Peoria and the surrounding northwest area. We’ve done very well in similar circumstances in Gilbert, and look forward to delivering our style of fine dining in Peoria. We believe it’s a great fit.”

A second location of Bourbon & Bones opened in February this year in Gilbert at San Tan Village.

The Bourbon & Bones menu features hand-selected wet-aged and dry-aged cuts of prime beef, wagyu beef, elegant options for fresh seafood and an extensive list of bourbons and whiskies. The Gilbert location, for example, offers more than 600 varieties, which is by far Arizona’s largest collection and includes some of the rarest options available to the public.  Bourbon & Bones is staffed with expert mixologists who deliver a robust cocktail program and, of course, certified sommeliers who oversee a significant wine list, including extraordinary Coravin pours by the glass.

Bourbon & Bones saw its beginnings in Old Town Scottsdale, at 4200 N. Scottsdale Road, opening in September 2016, in a converted mid-century modern building.  This flagship location appealed to discerning diners almost immediately, delivering an elegant-yet-easy style, perhaps a complement to Arizona’s leisurely lifestyle.

Said Rinzler: “Our goal with Bourbon & Bones is to deliver a fine dining experience that is also unpretentious in style.  Our hope is to be the spot that friends and families will count on to celebrate any occasion – whether it’s an anniversary, a birthday or simply an evening out to enjoy the best steaks and chops and selection of bourbons and wines anywhere.  We take great pride in what we’ve created here in Arizona with Bourbon & Bones and we’re delighted to look to the future to serve Peoria and the Northwest Valley as well.”

Meanwhile, the 6,750 square-foot second location at San Tan Village, on Williams Field Road in the East Valley, opened to serve legions of patrons almost immediately after years of pent-up demand for fine dining in Gilbert. In fact, before opening it was not uncommon for Gilbert residents to travel to downtown Scottsdale to enjoy Bourbon & Bones.

Bourbon & Bones interiors are a modern industrial chic design with elements of reclaimed wood, hand-forged iron accents, sumptuous booths and a mix of walnut dining and high-top tables. Bourbon & Bones is also identified by its large bar and lounge along with private dining space for groups and specialty dinners.
