Ambiente, a Landscape Hotel, one of the country’s most anticipated hotel openings, announced today that it has expanded its culinary offering in advance of its May 2022 opening to include a full-service signature restaurant, Forty1, led by Executive Chef Lindsey Dale along with a custom craft-cocktail program developed by nationally recognized mixologist Rob Floyd.

As a nod to joining the hotel’s 40 cube-shaped guest Atriums, Forty1 is situated at the center of the rugged three-acre Sedona property within the poolside lounge and adjacent to the open-air bar. Exclusive to hotel guests only, the restaurant will serve breakfast and dinner daily highlighting many locally grown and sourced ingredients from the Verde Valley and beyond.

A few signature dinner dishes by Chef Lindsey include Crispy Pork Belly with sweet corn puree, pickled ramps, slaw, chorizo crumble and chili orange glaze; Seared Prawn with smoked tomato coulis, spaghetti squash, fried basil, lemon pasilla chili oil; Rack of Lamb with date and caramelized shallot puree, heirloom baby carrot, pistachio mint chimichurri; Bison Strip Steak with crispy fingerling potatoes, chili garlic broccolini, Smelter Town Stout demi-glace; and Campbell River Salmon with spring pea gaivsa risotto, roasted patty pan squash, tempura squash blossoms, almond crumble and rose wine gastrique.

Forty1 will complement The Drifter, a separate culinary destination housed within a custom Airstream serving casual lunch options and poolside fare daily. Guests can look forward to enjoying such items as a Fried Green Tomato Sammie; Cubano Sandwich; The Burger; Ambiente Fish Sammie and Southwest Chicken Salad Wrap.

Chef Lindsey worked closely with Rob Floyd, known as one of the most renowned names in the cocktail industry, who designed the beverage menu at Ambiente. Floyd was introduced by his longtime collaborator, and close friend to the Ambiente team, Jon Taffer of Taffer Dynamics, who has helped to oversee the development of the hotel’s overall food and beverage program. A sampling of Floyd’s cocktails include Sedona Truffle “Air”, with muddled cucumbers and cilantro, aged tequila, lime, agave, chareau and a pinch of black truffle salt; Deconstructed Gin and Tonic, with gin, juniper berries, mint and garnished with a lemon, lime and frozen edible flower; Sweet Revenge, Orange Grey Goose Vodka, serrano pepper, lime, agave, prickly pear and fresh squeezed orange juice; Sedona Cloud, gin, lime juice, agave, crème de violette, bitters, cucumber and fresh basil; Sedona Mule, house-infused lavender-vanilla vodka, lime juice, agave, fresh ginger, fresh lavender, old-fashioned bitters and ginger beer; and 24-Karat Espuma Martini, lime juice, agave, pomegranate juice, gin, Veuve Clicquot and pomegranate seeds.

“Our opening has been a longtime coming and we’ve been no stranger to the challenges of opening a luxury hotel amid an ongoing pandemic and a supply-chain crisis, however as we get closer to opening our doors, we are excited to share the culinary vision that will help shape and enhance the overall guest experience,” said Jennifer May, owner of Two Sister Bosses, the developer and operator of Ambiente, a Landscape Hotel. “In recent months, we realized we needed a more innovative food and cocktail offering than originally planned due to the immense interest and demand we’ve seen from all over the world for guest stays and property buy-outs that will require a more elevated food and beverage program.”

At multiple intervals throughout the day, guests can also expect an outfitted beverage and snack ETrikeCo electric vehicle to make its way through the property offering a range of goodies such as coffee, pastries, gourmet snacks, pressed juices, craft cocktails and more to nibble and sip on between meals. A small fleet of ETrikes, which are street-safe, will also be available on a first-come, first-serve basis for guests to tool around town for the day.

While all of Ambiente’s 40 Atriums offer the same 576-square foot, King accommodations, the dramatic 360-degree panoramic views vary drastically as each Atrium has been expertly placed to maximize view corridors, whether that is north to the surrounding Coconino National Forest or east and south to the Steamboat, Chimney, Coffee Pot and Snoopy red rock formations. Elevated above the ground by piers and constructed using floor-to-ceiling, bronze-tinted glass and matte-charcoal and rusted metal, Ambiente’s Atriums are uniquely designed to blend in with the surrounding geography. With a focus on sustainable methods and organic, modern architecture that complements the neighboring topography and minimizes the impact on land, the Atriums’ sleek design embodies elegant minimalism, while contemporary, elemental interiors afford the utmost in luxurious, intimate accommodations.

Ambiente, a Landscape Hotel is an adults-only hotel that will welcome guests 21 years and older. Two Atriums will be ADA compliant, making the hotel accessible to guests of all abilities.
