When doors open this fall, The White Rabbit, located in the basement of the Heritage Court Building at 207 North Gilbert Road, is set to offer guests a one-of-a-kind destination experience found in the likes of big cities.
“We are thrilled to bring a speakeasy to Phoenix’s east valley,” says Nick Medina, who co-owns The White Rabbit with business partner Corey Potts.
“Gilbert is the perfect place for this concept because while it has many great dining destinations, we are bringing the first authentic high-end bar concept to the area. When guests enter, they will feel like they are stepping into a true speakeasy experience. Right now, we’re excited to hire the right leadership and staff to take that guest experience to the next level.”
Medina and Potts are seeking a dedicated general manager and operator to lead The White Rabbit staff and passionately create an unforgettable experience for each and every guest. From start to finish, the speakeasy vibe has been developed to capture the elegance and ambiance of an authentic speakeasy to truly immerse guests into the scene — right down to the secret door and password required for entry (shhh… guests can register on the website to receive it).
The White Rabbit is a place to get together with friends after dinner, featuring classic handcrafted cocktails, a large selection of whiskeys, local wines, brews and spirits, as well as interactive elements. Beyond Old Fashions, Manhattans, and Tom Collins, The White Rabbit will focus on creating classic, and other trending cocktail concoctions using only the highest quality and freshest ingredients as well as a small bites menu featuring charcuterie boards and olive trays. Drink “experiences” are offered for small groups.
