Fleming Creates Classic American Concept

Paul Martin’s® American Grill is set to open its first Arizona restaurant on March 17 at the Borgata of Scottsdale. This concept, co-founded by Paul Fleming, features a seasonal menu of classic American dishes prepared in a “scratch” kitchen.

Paul Martin’s most popular dishes include free range “Brick” Chicken with mashed potatoes and fresh herb jus, Marinated Skirt Steak with grilled maple-bourbon sweet potatoes and arugula, and their signature Banana Cream Pie.  The restaurant’s focus on freshness extends to the bar, showcasing hand-crafted cocktails with seasonal fruit infusions made in house; craft beers on tap; and an extensive wine list with over 100 labels, 80 of which are available by the glass.

The brand new 6,552 sq. ft. location accommodates 166 guests and features the warm, sophisticated interiors for which the brand is known.  A private dining area for 10 and patio lounge that seats up to 50 complete the space. The Scottsdale location adds 117 full- and part-time jobs to the local economy.

Each ingredient and its source were especially handpicked for the menu, which took more than a year to develop. The restaurant group maintains over 40 partnerships with farmstead producers. At the Scottsdale location, the menu includes produce and artisan products from several local farms and businesses. The menu will rotate seasonally with the freshest produce, seafood from sustainable fisheries, free-range and natural meats and poultry, artisan cheeses and cured meats from small, best-in-class purveyors.
