Heat up your tortillas, place the peppers, onion, and chicken. Then top with sour cream and lime. Serve with lime wedges and rice.

3. Simple Guacamole

One of the most popular easy Mexican recipes is guacamole. You can eat it on its own with chips or as a spread.

All you need is avocados, onion, serrano or jalapeno chilis, cilantro, sour cream, line juice, and tomato. You’ll start by mashing the avocados and then folding in the rest of the ingredients.
