Local breakfast favorite Over Easy is bringing its signature blend of modern diner fare and vibrant atmosphere to Buckeye with the opening of its 18th location next month. Set to open its doors on Saturday, August 9, 2025, the new restaurant is located at 1045 N. Verrado Way.

To celebrate, Over Easy will host a Welcome Weekend on Saturday, August 9 and Sunday, August 10, featuring penny mimosas with the purchase of an entrée (limit one per guest). Families are also invited to take advantage of a Kids Eat Free promotion, valid through the through the weekend at the new Buckeye location. The offer is available for dine-in only, with the purchase of an adult entrée (some restrictions may apply).

“We’re thrilled to continue our growth in the West Valley with the opening of our Buckeye location,” says Brian Terpay, COO of Over Easy. “This community is growing fast, and we’re excited to be part of it, serving up our signature breakfast classics and friendly service to a brand-new neighborhood.”

The new restaurant designed by Scottsdale-based architecture firm, Aline Architecture Concepts, and interior designer, Social Design Studio, features a main dining room, bar and patio to accommodate guests seven days a week for breakfast, brunch and lunch. Over Easy, known for creating energized takes on classic breakfast staples, will be serving menu favorites including Banana Nut French Toast, Golden Waffle Dogs, Chilaquiles, the Monte Cristo and a variety of fresh salads and sandwiches among other popular dishes.

Each Over Easy is recognized for its modern decor, featuring a custom neon wall. The aesthetic décor and great customer service have led to features on the Food Network, including “Diners, Drive-Ins, and Dives;” in Bon Appétit Magazine as well as recognition as one of America’s best breakfast and brunch restaurants by Travel + Leisure.

Over Easy will continue its expansion with an additional location set to open later this fall in North Phoenix (I-17 & Dove Valley), bringing the total number of locations to 19 by the end 2025.
