iStar Financial has announced that a modern Mexican restaurant, Salt Tacos y Tequila, will open a nearly 15,000 square-foot eatery at Westgate Entertainment District in November, which is the largest restaurant lease signed to-date.
Located in the former Margaritaville space, Salt Tacos y Tequila is a new restaurant concept from the owner of Whiskey Rose, located next door. Salt’s menu will feature such items as Bacon Wrapped Tomatillos; Habanero and Guava Lobster Tacos; a Braised Chuck Torta with chorizo BBQ, guacamole, pepper jack cheese and fried pineapple; Crab, Lobster and Prawn Ceviche; and a Braised Pork Tenderloin with red wine refried beans, brown butter Brussel sprouts and roasted cashews.
There will be a large selection of craft cocktails and margaritas along with an extensive tequila selection featuring more than 75 varieties.
The two-story space is currently undergoing renovations that include building a large indoor/outdoor bar, installing new glass garage doors, redesigning the interior and expanding the patio, which will wrap around the restaurant allowing for prime views of the Bellagio-esque dancing fountains and bustling plaza beyond.
“Since we opened Whiskey Rose at Westgate more than a year ago, I’ve seen how significantly Westgate has grown. New tenants are opening on a regular basis, there are more employees working in the offices and free events draw big crowds every week,” said John Tsailakis, owner of Salt and two Whiskey Rose locations. “There is a lot of opportunity here and we believe Salt will offer cuisine unlike anything in the West Valley.”

The depth and breadth of our offerings in the entertainment district continues to grow.”
Just last month, iStar announced four tenant openings including Security National Mortgage Company, CenturyLink, the expansion of Proliant’s offices and the coming-soon U. S. Air Force Recruitment Hub. This followed the early 2015 openings of Fractured Prune, Hot N Juicy Crawfish, Crave Waffle Sandwiches, OPA Life Greek Café.
