Sky Restaurant Concepts, the Valley-based restaurant group behind Squid Ink Sushi and Highball Cocktail Bar, announced its new culinary experience, Sparrow, opening early Fall at the Trailhead in Peoria. Sparrow will feature an American Eclectic menu, celebrating a vibrant blend of cultures, flavors, and styles that reflect the richness of modern American cuisine.

The 4,300-square-foot restaurant will offer an open-concept layout with a warm, inviting ambiance, a full bar with lounge seating, and a spacious covered patio. Sparrow is a result of a collaboration between Ganem Companies, ALINE Architecture and Social Design Studio to develop a restaurant intentionally constructed as a welcoming neighborhood gathering place that brings people together through flavor and design. Guests can expect an elevated dining experience, craft cocktails, and a refined and inventive atmosphere.

“Sparrow is designed as a place where people feel a sense of belonging the moment they walk in,” said Emily Ganem, Co-Owner and Creative Director of Sky Restaurant Concepts. “The vision behind the menu is to create something deeply American in the most authentic sense, that is eclectic, inclusive, and inspired by the world around us.”

Founded in 2010, Sky Restaurant Concepts is deeply connected to the communities it serves and driven by a passion for elevated hospitality. The group operates Arizona dining destinations such as Squid Ink Sushi and Highball Cocktail Bar in downtown Phoenix. At Sparrow, Executive Chef Schuyler Estes leads the culinary vision, crafting bold, approachable dishes that appeal to a wide range of tastes, and Operations Manager Libby Estes leads the team member and guest experiences. The cocktail program, designed by Libby Lingua and Mitch Lyons, the creative duo behind the acclaimed Highball Cocktail Bar, will offer an innovative drink menu to round out the Sparrow experience.
