Just as the desert sun begins to roast the sidewalks, The Peacock at DC Ranch is serving up salvation—one ice-cold cocktail at a time.

The chic speakeasy, discreetly hidden behind a bookshelf in The Living Room at DC Ranch, has rolled out its summer cocktail menu, an inspired collection of refreshing, nostalgia-tinged libations crafted with meticulous flair. From dill-kissed Negronis to a mint chip martini that channels your childhood ice cream truck (but boozier), this isn’t your average seasonal sipper list.

“The summer menu was built around easygoing, feel-good drinks—something refreshing that still feels special,” said Tom Kaufman, owner of The Living Room. “We wanted each cocktail to be interesting without trying too hard. There’s real craft behind every pour.”

The new offerings blend familiar flavor profiles with clever twists: dill-infused gin, coconut milk, and house-made cold foam find their way into beautifully balanced creations that never veer into gimmick territory. It’s a high-wire act of precision and playfulness—cocktails that look as good as they taste and taste even better than they look.

“We love contrast—mixing timeless technique with playful ingredients,” Executive Chef Chris George said. “The Fly Guy Negroni, for example, takes a classic and flips it with dill-infused gin. It’s subtle but memorable.”

Regulars are already buzzing. “Excellent service, delicious food—would definitely come back again,” wrote guest Suchi Patel in a recent review.

The Peacock’s speakeasy ambiance adds a whisper of mystique to the experience. Nestled behind a bookcase and glimmering in candlelight, it’s part lounge, part time machine—equal parts velvet and intrigue. It’s become a go-to for discerning locals, industry insiders, and anyone looking for a cocktail worth talking about.

“Our goal is for every drink to feel like a little moment,” Kaufman said. “This menu brings joy and surprise. It reflects the best of what The Peacock offers.”
