1. Soft and Chewy One-Bowl Cookies
The king of simple nut butter recipes, all you need is:
• Coconut sugar,
• Oat flour,
• Peanut butter (we like American Dream Nut Butter),
• Plant milk (or water),
• Baking soda,
• Sea salt, and
• Vanilla extract.
To make the mixture, put the peanut butter and sugar in a mixer and whizz it together until it’s nice and creamy. Beat in the vanilla extract next.
Then, in a separate bowl, combine the salt, baking soda, and oat flour. Whisk it all up until it’s well-mixed. You can then slowly pour this flour-mix into the sugary peanut butter and beat it together to form a dough!
Add some water or plant-milk until everything’s combined. The penultimate step is to turn your cookie dough into balls!
Take heaped tablespoons full of the dough and roll it between your palms to form them. You can then place your dough balls onto a baking sheet (with parchment paper!) and flatten them with a fork to create the classic cookie shape. Last but not least, bake them for 10 minutes or so in the oven (pre-heated to 350 degrees Fahrenheit).

• Your peanut butter of choice,
• Flaxseed meal,
• All-purpose flour (1/4 cup),
• Brown sugar,
• Baking soda and powder,
• Sea salt
• Cinnamon,
• Water, and
• Vanilla extract.
Start by creating what’s called ‘flax egg’. All you do is combine 1 tablespoon of flaxseed meal with 3 tablespoons of water to form a sticky, egg-like texture! You can then whisk together your flour, sugar, baking powder and soda, cinnamon, and salt.
Add your flax-egg and peanut butter and beat it all together into a dough. Then, leave it in the fridge for half an hour to cool down and firm up! When that’s done, roll the dough into balls, lay them on a baking sheet, and use a fork to flatten them.
The final step? Bake them in a pre-heated oven (350 degrees Fahrenheit) until the edges turn golden. They should take roughly 10 minutes to cook.
