Formerly the Olde Sedona Grill, Wild Thyme Restaurant Group purchased the iconic West Sedona property in late 2021 before embarking on a $3M transformation project that included a complete redesign inside and out.
Stagecoach Country Roadhouse offers two levels of outdoor dining, a rooftop bar with fireside seating and world-class red rock views. The restaurant’s focal point is a 20-seat wraparound bar next to the designated main stage and dance floor offering live music, dancing and mechanical bull riding on the weekends. Stagecoach Country Roadhouse is one of Sedona’s only upscale restaurant destinations offering private/semi-private dining room for parties, weddings and special events with seating up to 80 guests.

The opening of Stagecoach Country Roadhouse marks Wild Thyme Restaurant Group’s third restaurant concept to open in Sedona in the last 18 months. The company, founded by Heinrich Stasiuk, also owns hip coastal eatery Shorebird, Molé Fine Cuisine of Mexico and JayBird’s Nashville Hot Chicken. In addition to operating 32 restaurant locations in 5 states, the company also manages resort restaurants and hospitality concepts in key tourism destinations across the U.S. and in the Caribbean including Spoke & Wheel Tavern at the Los Abrigados Resort & Spa by Diamond Resorts in Sedona.

With a menu designed by James Beard recognized chef Roberto Madrid, formerly of Deseo at the Westin Kierland Resort and Spa, Stagecoach Country Roadhouse continues the company’s tradition of high-quality culinary experiences with modern flair. The restaurant and smoker is helmed by Executive Chef Bert Bonnarens, an accomplished fine dining and hotel and resort chef originally from Belgium.
Featuring the finest cuts of beef and meats smoked to perfection, everything on the Stagecoach menu is made from scratch. Starters like Pulled Pork Egg Rolls, Smoked Devil Eggs and and Blue Corn Nachos fuse country flavors into tried-and-true classics. Signature dishes include Scottish Salmon with dill-honey pistachio yogurt, lemon and green rice, Bison Short Ribs with blackberry gastrique, loaded smashed potatoes and house favorite Sedona Red Clay Chicken prepared with sweet peppers, roasted garlic confit sauce and cornbread.
The prime certified angus steak selection includes a cowboy-style Ribeye Steak with Guajillo compound butter, smoked salt flakes, Filet Mignon topped with rich Bourbon compound butter and caramelized shallot, a Wagyu spiral-cut steak with tomato pebre sauce and more. To accompany each cut, Stagecoach offers a steak sauce menu featuring Chimichurri, Peppercorn Demi Glaze, Chive or Bourbon Compound Butter and Grated Horseradish.
From the Smoking Wagon, Stagecoach grills up a carnivore’s feast. Sink your teeth into fall-off-the-bone St. Louis-style ribs, Pulled Pork, Andouille Sausage, Jalapeño Cheddar Sausage or The Loaded Gun Board featuring a rack of St. Louis-style ribs, pulled pork, andouille sausage, pickles, onions, pickled jalapeños and grilled flat bread for the heartiest appetites. For burger lovers, Stagecoach piles them high with all the gourmet fixins. A selection of house-made BBQ sauces bring the flavor and turn up the heat.
Vegetarian cowboys will delight in an array of inspired menu items, including the irresistible Portobello Mushroom Fries with aioli dip and the Grilled Vegetable Tower with Tomato, yellow squash, spinach, jalapeño jack and tomato coulis, along with a variety of fresh salads and soups featuring local flavors and ingredients.
Classic sides include Roasted Brussel Sprouts, Mac and Cheese, Country Baked Beans, Truffle Fries and more. For dessert, Stagecoach’s signature dessert, pick the Chocolate Rustler with decadent chocolate sponge cake, white chocolate ganache and Sedona Red Rock accoutrément. Created by Beverage Director Topher Bray, the cocktail menu features an array of signature mézcal and tequila drinks like the local favorite Blood Orange Mezcalita featuring Bruxo Mezcal, blood orange puree, lime, agave and the Sedona Sunset that’s made with Bruxo Mezcal, pineapple, guava, lime, chambord and habanero bitters.
